Ingredients
- 1 ½ C Animal Cracker Flour (This is about 8oz of animal crackers.)
- ¾ C All Purpose Flour
- ¼ Tsp Cinnamon
- ½ Tsp Baking Powder
- ¾ C Salted Butter (At room temp.)
- ½ C Granulated Sugar
- 1 Large Egg (At room temp.)
- 2 Tsp Vanilla
- Zest of 1 Lemon
Instructions
- Blend your crackers into a flour with a food processor on medium speed.
- Measure out your dry ingredients including your animal cracker flour, all purpose flour, cinnamon and baking powder, then whisk until fully combined.
- Cream your butter and sugar for about 2 minutes in a stand or hand mixer. Next, beat in 1 egg and your vanilla until fully incorporated (About 1 minute.).
- Add your dry ingredients and lemon zest to your butter mixture, then stir in with a stand or hand mixer just until incorporated.
- Once you've made your dough, divide the dough into two pieces, on a floured sheet of plastic wrap. Sprinkle a little bit more flour on top to prevent sticking.
- Roll your dough out to 1/4 of an inch. Then cover your dough sheet with the remaining plastic wrap.
- Place each dough piece on a sheet pan. Then chill for 2 hours.
- Use a cookie cutter of your choice or a knife to cut out your cookies. Place each cookie on a sheet pan lined with a silicone baking mat or parchment paper. Continue this process by rolling out the remaining dough scraps until all the dough is used up.
- Chill your cut out cookies for 30 minutes. While you are doing this, start to preheat your oven to 350°F.
- Bake your cookies in the oven for 11 minutes, or until they just start to brown on the edges.
