Animal Cracker Cookie Dough

  • 1 ½ C Animal Cracker Flour (This is about 8oz of animal crackers.)
  • ¾ C All Purpose Flour
  • ¼ Tsp Cinnamon
  • ½ Tsp Baking Powder
  • ¾ C Salted Butter (At room temp.)
  • ½ C Granulated Sugar
  • 1 Large Egg (At room temp.)
  • 2 Tsp Vanilla
  • Zest of 1 Lemon


  1. Blend your crackers into a flour with a food processor on medium speed.
  2. Measure out your dry ingredients including your animal cracker flour, all purpose flour, cinnamon and baking powder, then whisk until fully combined.
  3. Cream your butter and sugar for about 2 minutes in a stand or hand mixer. Next, beat in 1 egg and your vanilla until fully incorporated (About 1 minute.).
  4. Add your dry ingredients and lemon zest to your butter mixture, then stir in with a stand or hand mixer just until incorporated.
  5. Once you've made your dough, divide the dough into two pieces, on a floured sheet of plastic wrap. Sprinkle a little bit more flour on top to prevent sticking.
  6. Roll your dough out to 1/4 of an inch. Then cover your dough sheet with the remaining plastic wrap.
  7. Place each dough piece on a sheet pan. Then chill for 2 hours.
  8. Use a cookie cutter of your choice or a knife to cut out your cookies. Place each cookie on a sheet pan lined with a silicone baking mat or parchment paper. Continue this process by rolling out the remaining dough scraps until all the dough is used up.
  9. Chill your cut out cookies for 30 minutes. While you are doing this, start to preheat your oven to 350°F.
  10. Bake your cookies in the oven for 11 minutes, or until they just start to brown on the edges.
