  1. Follow the dough preparation steps for the cookie dough recipe of your choosing.
  2. Chill your dough in the refrigerator for 1-2 hours. Tip: Before chilling your dough, roll it out slightly to thin it out, between two sheets of plastic wrap ahead of time (or parchment).This will help you limit the issue of your dough becoming hard to work with.
  3. Roll your dough out the rest of the way (1/4in thick).
  4. Use a 3in round cookie cutter to cut circles until all remaining dough is used up.
  5. Bake your cookies according to the recipe instructions.
  6. Let your cookies cool, then pipe a circle around the edge of each cookie. Make sure to give each cookie a few minutes to dry slightly, before proceeding to the next step.
  7. Flood each cookie with your royal icing. Use a toothpick to spread icing over any spots you might miss.
  8. Let your cookies dry for about 45 minutes to an hour.
  9. Sprinkle each cookie with your blue sanding sugar sprinkles.
  10. Pipe a small dot of icing on the back of each marshmallow chick to make sure they stick to the cookie. Then place each one on top of a cookie.
